Ingredients

20g Dried Sundakkai / Dried Turkey berry soaked in hot water
1 Tsp Gram Dall
1 Tsp coriander seed
35 shallots
30 garlic
2 inch, 2 pieces Coconut
Curry Leaves
small lemon size tamarind
1/2 tsp Mustard
1 tsp cumin
1/2 tsp Fenugreek seeds
1 Tomato
1/4 tsp turmeric powder
3 spoon Kuzhambu Chilli powder
Water
as required Salt

    Sundakkai vathal kulambu is one of the best south Indian kulambu recipes. Any festival in south India you can taste this vatha kuzhambu recipes along with kootu, poriyal, appalam and Rice. This kuzhambu recipes in the best combination with steamed rice with little ghee or sesame oil.

    I got this kulambu recipe from my chef who is taking care of samayal in all of my family function.
    The coconut and masala paste what we are going to prepared here is gives much taste and richness to the kuzhambu or gravy. You can use any vathal (dried vegetable) for making vathal kulambu like manathakkali vathal, kathiri(brinjal) vathal, kothavarangai(Cluster beans) vathal and even ivy gourd vathal etc,.

    Soak sundakkai vathal / dried turkey berry

    Soak sundakkai vathal in hot water which makes the vathal soft

    Lets prepare masala paste

    Heat 1 teaspoon oil fry garm dal, coriander seeds, 3 shallots and 3 garlic for 2 mins, then add coconut and curry leaves. Make it as fine paste and keep it aside.

    Lets prepare kuzhambu

    Heat 3 Tbsp Sesame oil splutter mustard, cumin, fenugreek and 30 garlic cloves

    Add chopped shallots, curry leaves and sundakkai vathal(strain water) fry for 3 mins

    Add 1 chopped tomato and little salt which makes the tomato so soft quickly.

    Add spices

    Add turmeric powder and 3 or 3.5 spoon kuzhambu chilli powder and mix well then add ground paste with little water and again mix well

    Add Tamarind water use small lemon size tamarind water to make the tamarind paste mix well and add enough water salt. Bring this kuzhambu to boil at least 10 medium flame and 5 mins low flame.

    Finish with ghee

    Now Vathal kuzhambu is ready. Pour little ghee on top of the kuzhambu and serve
