Ingredients

Adjust Servings:
8 small pieces Drumstick
5 no. small in size Brinjal
1 big Onion
2 Big Tomato
15 cloves garlic
2 Tbsp Cooking Oil
1 Tsp Mustard
little Curry Leaves
1 Tsp fennel seed
1/2 Tsp turmeric powder
As Required Salt
2 Spoon Kuzhambu Chilli powder
1 Glass Water

Drumstick Brinjal Curry

    This Brinjal curry is made to be eaten with rice rather than roti. Any kind of brinjal is used to make this curry. Many make this curry with different variations and I have preferred to keep it simple.

    Brinjal curry is a traditional south indian curry. It is a veg curry gravy recipe made using eggplants and is similar to other veg curries like potato and plantain curry etc..

    This is a basic indian veg curry that is made in onion tomato masala gravy and into it added is eggplant and Drumstick which forms a thick gravy perfectly suitable to be eaten with steamed rice.

    Also it goes well with any variety rice like lemon, tamarind and curd rice. This is best Side dish for sambar and rasam sadam.

    Heat Oil add Mustard, when it splutter add curry leaves, and crushed Garlic cloves

    Add Finely Chopped Onion saute till it becomes light brown.

    Add Finely chopped Tomatoes, little salt and Turmeric powder and saute till the tomatoes becomes soft.

    Then add Kuzhambu chilli powder or 1 spoon red chilli, 1.5 spoon Coriander powder and Mix well.

    Add Chopped Drumstick and slit Brinjal and Mix it with onion tomato Masala.

    Add 1 or 1.5 glass of water to cook the vegetables. Cover and cook for medium heat with 5 mins.

    Add Fennel powder and cook for 2 mins in low flame.

    Now its all done. Switch off the flame and Garnish with finely chopped Coriander Leaves. Serve with hot steamed Rice.
